Making this recipe tonight for dinner – but since I am NOT a fan of chicken thighs and I only have breasts in the house that is what I will be using. As for the low sodium chicken stock – I will be using 1 cups water mixed with 1 tablespoon of Better than Bouillon Chicken base. Other than those 2 changes can’t wait to make and eat this recipe. Oh – I have cut this recipe down to 3 servings – since there is only me. Thanks again for posting it.

These were fantastic! As some have commented, there is a discrepancy between cup amount vs weight of the flour, however we went by the weight as she recommended and it worked perfectly! We also reduced the amount of sugar by half, and added in some blueberries for extra flavour which complemented the lemon very nicely. We did not have any issues with the thickness of the batter, and they turned out light and fluffy as promised! We will definitely be making these again :)

I have made this recipe many times. It’s a family favorite!! I always have extra adobe chilies from the can, so I am thinking about making extra sauce and freezing it in my new Souper Cubes. Then I can just brown the meat and pull out a frozen sauce and heat in the crock pot for the day. Thank you for sharing!
