I’m so sorry this happened! I believe it’s an issue with the make/ model of some slow cookers. I’ve had a few brands I had to toss out Hamilton beach and an all clad didn’t cook evenly for me and took much longer to cook a dish than should be. You can simmer everything the stove to cook and tenderize faster. Sorry for the late reply!

It was bland. I should have called my dad. The 8 hours in my crockpot and it totally fell apart I probably should have only did 6 hours and added tons more seasoning.

Simply coat the meat with olive oil, and salt both sides with kosher salt.
This allows the salt to be pulled into the meat tissue, which will result in a deeper color after the 24 hours.
I also add large flake black pepper as well.
Plate the meat and cover with foil.

I am not sure why this happened as I have made other pot roasts before. It is now Christmas Eve and I’m in a panic as I am supposed to take this over to my mother’s house for dinner. Do you have any recommendations on how to cook the potatoes and carrots quickly to try to salvage the dish??

I made this as written and it turned out perfect! I cooked it on low for 8 hs and it was ready. I served it for Thanksgiving and everyone liked it better than the turkey. We now have a new tradition. Thanks!

Put crockpot on high for first hour and low for four in order to eat at desired time. Roast was so moist and delicious!
